Welcome to the Winemaker’s Dinner at Restaurant ELD – an evening with Fabio Bordino from PETRA in Tuscany.
The story begins in the mid-1990s, when Francesca Moretti traveled with her father Vittorio to Bordeaux and fell head over heels for the region’s history, culture, and wines. Inspired, she decided to change course – not to become a veterinarian, but an oenologist. Back in Italy, the search began for the perfect land to transform with a clear Bordeaux influence. Tuscany became the natural choice, and the dream took shape in the Maremma region, where hand-harvesting and careful grape selection are the signature of Petra’s winemaking philosophy.

Amuse-bouche
Smoked venison carpaccio with langoustine, crème fraîche & trout roe.
Starter
Scallop with tomato consommé, served with jalapeño cream, cucumber, roasted celeriac, squid, and squid ink tapioca chips, finished with jalapeño oil.
Main course
Moose filet mignon with a beetroot jus and smoked cherries.
Dessert
Head chef Irene’s tiramisu, served with a handcrafted chocolate praline.
Price: 1,250 SEK per person including wine.
