On October 25, Restaurant Eld invites you to a Winemaker’s Dinner!

Embark on a journey through Portugal’s wine country with wines from Niepoort (Since 1842), in collaboration with Arvid Nordquist.

Menu:

AMUSE-BOUCHE
Venison carpaccio with smoked crème fraîche, langoustine, shrimp, trout roe, and lingonberry crispbread.

Paired with Niepoort Natcool Bairrada Baga.

STARTER
Scallop in tomato consommé with baked celeriac, jalapeño mayonnaise, finger lime, tapioca chips, and amaranth cress.

Paired with ADN alvarinho.

FISH MAIN COURSE
Hake and rainbow trout wrapped in seaweed.
Served with a buttered white wine sauce made from Swedish blue mussels, topped with chives, sea asparagus, fennel, celery, parsley, Kalix vendace roe, broccoli, and green oil.

Paired with Coche Branco.

MEAT MAIN COURSE
Moose tenderloin with game stock of deer and roe deer, flavored with Madeira, black trumpet mushrooms, black currants, and pickled chanterelles. Served with Pommes Anna with Västerbotten cheese, duck fat, butter, and fresh thyme.

Paired with Redoma Tinto och Vintage Port 2022.

DESSERT
Chocolate cake with cognac-apricot, dark chocolate, ganache, and chocolate mousse.

Paired with Colheita 2003 tawny port.
